용연

Definition

용연(龍涎)은 향유고래가 뱉어낸 토사물로 만든 향료이다. 향유고래는 오징어 등의 먹이를 대량으로 먹는데, 그중 소화되지 않은 부분을 담즙과 함께 밖으로 토해낸다. 때로는 향유고래가 싸는 똥과 함께 나오기도 한다. 이것을 알코올에 녹여 정제하면 고급 향료가 된다. 서유구(徐有榘)의 《임원경제지 이운지(林園經濟志 怡雲志)》에 만드는 방법이 실려있다.
