Definition
편육족병(片肉足餠)은 편육과 족병을 1자 높이로 한 그릇에 고인 것이다. 편육은 고기를 푹 삶아서 익힌 것을 판판히 눌러 얇게 썬 것이다. 족병은 육류나 닭 중 아교질이 많은 족, 가죽, 힘줄 등 부위를 무르게 고아서 식혀두어, 묵처럼 엉기면 편편히 썰어 낸 것이다. 1887년(고종 24) 1월 27일 경복궁 만경전에서 열린 정일진찬 때 신정왕후에게 올린 대왕대비전진어찬안에 있다.
