화성 행궁에서 벌이는 행사에 쓸 음식을 장만하기 위해 마련한 건물이다. 1795년(정조 19) 혜경궁의 회갑연에 대비하여 지은 것으로 보인다. 이런 시설은 임시로 야외에 천막으로 가림막을 치고 안에 화덕을 갖추어 시설하고 행사를 마치면 철거하는 것이 보통이다. 화성에서는 고정적인 시설을 마련하여 사용한 점이 다르다.

별주는 혜경궁 홍씨의 회갑잔치와 현륭원 참배에 필요한 음식을 준비하고 문서를 보관하던 곳이다. 1795년 혜경궁 홍씨의 회갑연 당시 정조와 혜경궁을 위한 음식은 별주와 비장청 주변 임시 건물에서 준비하였고, 잔치에 참여한 내빈과 신하들의 음식은 서리청 주변과 별주의 서북쪽 공터에서 만들었다.
정조는 혜경궁 홍씨의 70세 고희연도 화성행궁에서 치를 생각이었기 때문에 회갑잔치 때 사용했던 그릇과 남은 비단 등을 창고에 보관하고 관리 문서를 별주에 보관했다. 국왕이 화성행궁에 머물 시 예법에 맞게 수라를 올리는 규칙 문서 또한 별주에 보관하였다.
별주는 정조 사후에 현륭원과 건릉, 화령전 제향에 필요한 물품을 조달하는 관서인 분봉상시(分奉堂寺)로 바뀌었다. 2019년에 이루어진 발굴조사에서 「행궁전도」 그림과 동일한 형태의 건물지가 확인되어 복원의 근거가 되었다.

Detached Kitchen

This is a kitchen built to prepare food for special events held in this temporary palace. It was first built in 1795, at the time of the royal banquet for celebrating the 60th birthday of King Jeongjo’s mother. Afterwards, this kitchen was used as a separate cooking place for various events in the palace. Usually, this kind of facility was temporarily installed outdoors with tents and a brazier, and then removed after the event, but this kitchen was operated as a permanent facility.

This detached kitchen was established in 1793 to accommodate the large-scale food preparations needed for the sixtieth birthday banquet of King Jeongjo’s mother Lady Hyegyeong in 1795 and for offerings made at the tomb of his father Crown Prince Sado.
Following Lady Hyegyeong’s banquet, the tableware, silk, and other goods were kept in a storehouse to use at her seventieth birthday banquet, while related documents were stored in the detached kitchen. However, upon the king’s untimely death in 1800, the detached kitchen was repurposed into a government office for the preparation of veneration rituals at Hwaryeongjeon Shrine and the tombs of Crown Prince Sado and King Jeongjo.
The detached kitchen was built anew in 2023 based on historical depictions of the kitchen that were verified through an excavation of the site conducted in 2019.
영문 해설 내용

별주는 정조의 어머니인 혜경궁 홍씨의 회갑 잔치(1795)와 아버지 사도세자의 묘에 참배할 때 필요한 음식을 준비하는 곳으로 1793년에 창건되었다.
혜경궁 홍씨의 회갑연이 끝난 후 그릇과 비단 등의 물품을 고희연 때 사용하기 위해 창고에 보관하였고, 잔치와 관련 있는 문서 또한 별주에 보관하였다. 하지만 1800년 정조가 세상을 떠난 후 별주는 사도세자와 정조의 묘와 화령전 제향에 필요한 물품을 조달하는 관서로 바뀌었다.
문헌에 기록된 것과 동일한 형태의 건물지가 2019년 발굴조사에서 확인되었으며 이를 토대로 2023년 현재의 별주가 복원되었다.
