전복초

Definition

전복초(全鰒炒)는 전복에 진장과 꿀을 넣어 달고 윤기 나게 졸여낸 후 잣가루를 뿌린 음식인 전복초를 1자 높이로 한 그릇에 고인 것이다. 초(炒)를 만드는 주재료는 전복, 해삼, 소라, 홍합, 부아, 저태 등이다. 1887년(고종 24) 1월 27일 경복궁 만경전에서 열린 정일진찬 때 신정왕후에게 올린 대왕대비전진어찬안에 있다.
