Definition

삼색전유화(三色煎油花)는 해삼전, 양전, 간전 등 세 종류의 전을 1자 높이로 한 그릇에 고인 것이다. 전유화는 생선, 고기, 내장, 채소 등을 모양이 나게 한 입 크기로 저며서 달걀, 메밀가루, 밀가루 등의 옷을 입혀 기름에 지진 음식이다. 전유어(煎油魚), 간남(肝南), 간납(肝納), 전야, 전(煎)이라고 하며 궁중에서는 전유화라 했다. 1887년(고종 24) 1월 27일 경복궁 만경전에서 열린 정일진찬 때 신정왕후에게 올린 대왕대비전진어찬안에 있다.
